Phytate strongly inhibited the activity of high pI -amylase (group -AMY1). In contrast, the -AMY2 (low pI isoenzymes) were weakly suppressed by this compound. The inhibitory effect of phytate on the activity of -amylase is comparable in level to that of the known chelator of divalent metals, EDTA-Na2. However, in the case of phytate, the inhibitory effect on individual isoenzyme groups was more selective. Possible ways of sodium phytate impact on the activity of wheat -amylase are discussed."
