dc.description.abstract To the article the results of analysis of problem of enriching of flour bioactive substances are driven. In Russia and abroad in flour-miller enterprises for enriching of flour new innovative vitamin-mineral premix, additions is widely used. In Kazakhstan,problems of biologically active additives, fortification of flour began to engage in individual enterprises.In accordance with Technical Requirements on the enriched flour maintenance of iron in a flour producible in Kazakhstan it is understated more than in two times, therefore for prevention of iron-deficient anaemia in order it is necessary to enrich pangs vitamins and mineral substances en_US
